SweetWaters Celebrates The Grapefruit With The Avocado Salad With Grapefruit Mint Gremolata Recipe

The Avocado Salad with Grapefruit Mint Gremolata has been extremely popular at Sweetwaters on the River restaurant in Eugene, Oregon. At the request of many of our guests at Valley River Inn, here is the recipe! It may seem to be a difficult process but is actually quite simple. It is impressive at formal dinner parties as well as casual summer dinners. We hope you try it and enjoy!

SweetWaters Avocado Salad With Grapefruit Mint Gremolata

2 Large, ripe avocados                                  
3oz. Goat cheese                                         
(finely) chopped and toasted hazelnuts        
Thinly sliced Parma ham or prosciutto             
2oz. Red oakleaf lettuce                                      
Golden balsamic vinegar and olive oil                           

Grapefruit Gremolata
10 ea. Grapefruit segments
6ea. Mint leaf (chopped)
Zest of 3 lemons
Black Pepper
(combine)

Assembly:

  • Slice avocado in half and remove pit.  Gently peel skin away using a large spoon leaving each avocado half intact
  • Thinly slice each half lengthwise.  Gently push slices apart until they form a continuous line and form into a ring
  • Arrange lettuce greens in the center of avocado ring
  • Form goat cheese into ½ ounce balls; roll in chopped hazelnuts
  • Using a sauté pan fry Parma ham until crispy
  • Whisk olive oil and golden balsamic together 
  • Drizzle dressing around avocado ring
  • Arrange goat cheese and Parma ham on plate for presentation
