May's Signature Cocktail: The Riverside Mai Tai

There is nothing quite like spring time in the Willamette Valley, the sun is shining, and the flowers are blooming and on rare days you may even find that you can sit outside on the patio in some cold drink sipping weather. As we near our 40th anniversary of the Valley River Inn we flash back for this month’s signature cocktail, the Riverside Mai Tai.

Riverside Mai Tai Recipe

  • ¾ oz. Spiced Rum
  • ¾ oz. White Rum
  • Pineapple Juice
  • Splash of Orange Juice  
  • ¼ oz. Myers Rum  
  • ¼ oz. Crème de Noyoux  
  • Dash of 151
  • Hurricane glass

Fill Hurricane glass with ice; pour in the white and spiced rum. Fill the glass two thirds of the way with the pineapple juice, and add the splash of orange juice. Float the Myers Rum, Crème de Noyoux, and add a dash of 151. Serve with a pineapple and cherry.
