Sweetwaters on the Rivers: The Study of Salmon Recipe

The Destination Culinary™ Chefs are pleased to introduce our “Study of Salmon.”  With so many recipe options and methods of preparation, Salmon is a food sure to please even the most discriminating of palettes. 

In honor of this month’s Study Of, our Executive Chef Michael Thieme has created four signature recipes featuring this versatile ingredient.  Each of these dishes will be featured in Sweetwater’s on the River until the end of June.  The recipe for the first dish is listed below:

Salmon Skewers Recipe


  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 Tbsp minced garlic
  • 2 Tbsp minced fresh ginger
  • 1/4 cup minced green onions
  • 2 Tbsp sesame oil
  • Pinch chili pepper flakes
  • 1 lb salmon fillet, cut into 1 inch cubes
  • 1 Bell peppers, cut into 1 inch chunks
  • 1 Red onions, cut into 1-inch segments
  • 16 white mushrooms
  • 8 bamboo skewers, soaked in water for at least 20 minutes before using
  • Saffron Rice
